Se maduran en las bodegas de Machecoul, en el Loira Atlántico, región natal de Pascal Beillevaire. La quesería también elabora sus propios quesos (machecoulais, mojette, brun de noix, rocher nantais, secret du couvent y pont d'Yeu) y una amplia gama de productos frescos como mantequilla cruda y nata.
