El chef Michael Tusk dirige desde 2003 este restaurante triplemente estrellado por la guía Michelin (la última vez en 2017). El restaurante llega también regularmente al top des hit-desfile de los establecimientos de California. Se sirve una cocina californiana con influencias italianas, preparada a base de ingredientes estacionales y locales. El menú es "impuesto" por el chef y nos gusta guiarse por una mano tan experta. Una verdadera delicia tanto para los ojos como para las papilas.

Unfortunately we discovered last night that the renovation has, for us, ruined the restaurant.
Loud “contemporary pop” music blasting so you have to fight to have a conversation is not our idea of fine dining. Half a dozen ignored requests to turn it down? I was literally begging— to no avail. And we were the largest party in the restaurant— a table of six. Total tab: multiple thousands.
Bad acoustics, no table cloths, plastic tables reminiscent of a summer camp dining hall?
Sorry but they have lost us — we won’t be going back, and will miss the old Quince: quiet, intimate fine dining at its best.
