Situado en el Hotel Merrion, es uno de los restaurantes franceses más famosos de Dublín. La reputación de su chef está bien consolidada y el restaurante, elegante y refinado, es muy popular entre una clientela de asiduos afortunados y turistas inspirados. A las recetas tradicionales, el chef tricolor aporta un toque de modernidad e inventiva. El resultado: los platos son admirables, están magníficamente preparados y se disfrutan con gran placer. Finura, elegancia y sabores garantizados. Caro pero excelente.

What truly stood out was the exceptional wine list. Patrick Guilbaud’s commitment to offering a diverse and curated selection of wines elevated the dining experience. From the finest vintages to hidden gems, the sommelier’s expertise added a layer of sophistication to each course.
The menu showcased culinary artistry, presenting dishes that were not only visually stunning but also a symphony of flavors. Each plate was a testament to the chef’s dedication to perfection, using premium ingredients with precision.
Overall, Restaurant Patrick Guilbaud is a gastronomic gem where every aspect, from the ambiance to the cuisine, is a celebration of culinary excellence. A special nod to the outstanding wine list, making it a must-visit for connoisseurs and those seeking an unparalleled dining experience.
Of immediate note was the amateurish service from beginning to end. Did not feel polished or attentive, certainly not what one would expect from a 2 star. This was honestly the worst part of the experience. Things like not delivering plates at same time, not explaining the course, appearing rushed or dis interested.
The room itself was dated and uninviting. Felt like any generic hotel restaurant with tables crammed in. Again comparing to chapter one I was very aware of other tables and not focused on our own.
Food was what I'd call "standard tasting menu" fair, and exactly what I'd expect. Good overall but not Wow, which at that price point is what is expected. Fois grais course was the highlight.
Overall the experience was fine, but I would not recommend or go back. At that price point the experience was very disappointing. The gold standard in Dublin is the likes of chapter one, and Guilbaud just felt like an inferior experience in comparison. Staff and crowded dining room being the big disappointments
