Dos antiguos del Agapé - Toshitaka Omiya (ex George V) en cocina y Shawn Feliz en sala - se unieron para demostrar que han aprendido lo mejor de su recorrido en grandes casas. En su partición, las notas se extienden por una prestación sin errores. Los productos son cuidadosamente elegidos y trabajados con talento y creatividad. A la carta: erizos verdes de Islandia en la campari y pomelo, bogavante azul acompañado de espinacas y kumquat, cordero "Rojo del Oeste" a las avellanas, liebre a la real, chocolate grande cruda Jamaya y remolacha, Perfecto helado a las avellanas o platos de queso de la Maison Laurent Dubois… Del gran arte… Y un servicio a la altura.
To begin with, the food, though well-presented, was quite average overall. There were no standout dishes that tasted or looked exemplary.
Perhaps the biggest issue is the service. During the course of my two-hour dinner, one of the waiters dropped two of the foods (one appetizer and one dessert) off their presentation trays. In the instance of the dessert, he simply put it back onto the tray instead of replacing it. This is unacceptable for a so-called Michelin-starred restaurant.
A second, taller waiter with glasses also dropped a spoon into my plate which produced a loud sound. While initially a non-issue, he went on to drop another customer’s umbrella as they were leaving the restaurant and immediately dropped his coat after that.
As someone who has dined at Michelin restaurants of all stars as well as other high-end restaurants all over the world, the food and service falls painfully behind at this establishment. Rightfully, there was no tip and for a menu of 175€ pp, I am far, FAR from enthusiastic to recommend this place.

Nous sommes arrivés pour le dîner et nous avons été servis en dernier alors que d’autres tables sont arrivées après nous.
Clients de tables de haute gastronomie, nous sommes fortement déçus et nous ne reviendrons plus à cette adresse.
Primé d’une étoile au guide Michelin, ce restaurant n’est pas à la hauteur du standing attendu.
We ordered the 6-course Resonance dinner menu (€175 per person) and were surprised with more than 10 courses served. Memorable highlights included the oysters, scallops and foie gras.We had a delightful dining experience over 3 hours. We even received pastries and bread to take home.
