En el corazón de un viñedo situado entre 200 y 450 metros de altitud en el departamento del Aude, Pierre Fabre ha heredado su pasión por el vino de las cinco generaciones que le precedieron. En el Château de Gaure, este viticultor apasionado y pintor de talento elabora vinos ecológicos AOP Limoux y AOP Languedoc. Produce 6 cuvées: dos con una sola variedad de uva y otras cuatro mezcladas para resaltar el carácter de las parcelas y la armonía de las cepas. Distribuye tres vinos blancos y tres tintos. El Château de Gaure también ofrece alojamiento y desayuno y table d'hôtes.

THE HOURS ARE ALL WRONG. Tasting is by appointment only. Worth it though. Totally organic and amazing flavors.

We visited this winery on our way back from Saint-Hilaire FR to where we were staying in Carcassonne back in October of 2022. This quaint winery was picturesque, and the wine was delightful. The owners were knowledgeable and welcoming, showing us maps of the region and where their grapes grew. Prices were amazing compared to what we pay for in the states. We ended up leaving with quite a number of bottles we were thankful made it all the way home in our luggage.

After a year, the Languadac vintage was just as vibrant and bold as we remembered. We will always think fondly of our visit here.
